The NV (2020) Extra Brut Les Cochènes 100% Pinot Noir, is terrific. Soaring aromatics make a strong first impression. Kirsch, white flowers, mint and lemon confit all grace the palate. This understated Pinot is quite subtle. There's gorgeous breadth and texture here, with no hard edges and exceptional balance. No dosage. Vineyards: Single parcel of 1984 massale selection plantings in Gueux. South/ South-east facing slope.
Soils: Sandy and silt
Winemaking: Grapes are lightly pressed and fermented using natural yeast. Vinification occurs in jarres and oak barrels. No chaptalization, malolactic fermentation can occur but is not forced. The juice is bottled on fruit days in locally produced bottles. Alexandre bottles with 22 grams of sugar instead of the more typical 24 grams, resulting in a softer, finer mousse.
Aging: Aged in jarres and oak barrels, sur lattes under cork 24+ months, all riddling is done by hand and Alexandre will do "poignettage". Unfined and unfiltered; 10 mg/L total SO2; zero dosage; Disgorgement by hand according to the lunar calendar.
Tiny Production: 1,500 bottles
From a single parcel of 1984 plantings of Meunier in the village of Gueux the sandy lieu-dit of Les Cotes Cheries gives a fleshy and ample Champagne of gorgeous fruit concentration and precision. A real standout in the lineup!
