A vivid blend of ripe apples and pears, sweet sage and honeyed florals form an enticing bouquet as the NV Blanc de Blancs Durant blossoms in the glass. This displays immaculate balance, mixing ripe pit fruits and sweet spice with flinty minerals over a luxuriously creamy bead of bubbles. It finishes with admirable length and concentration, adding grip to the finish as enriching notes of raw almond fade slowly. The Durant is a blend of the 2019 and 2021 vintages. Winery: The Durant Vineyard Blanc de Blancs is part of our first set of cuvees bottled for traditional method sparkling production. With a focus on reductions in canopy and sites that produce excellent flavor profiles at low potential alcohols and high acidity, we have watched as our numbers for still Chardonnay have come increasingly closer to what is necessary for high quality traditional method sparkling wine. With the excellently cool 2019 vintage, we felt the wines were at an ideal point, and set aside the first barrels to use as reserve base wine. Durant Vineyard stretches up an east facing slope of the Dundee Hills. The 2019 component was from a block of Durant Vineyard mid-way up the slope, which worked well for the low sugars accumulated in that vintage. With 2021 vintage we pulled fruit exclusively from the lower blocks of Chardonnay from Durant, where cool air pools at the foot of the hill, and sugar ripening is delayed. Utilizing larger format oak barrels (600 & 800L) allows for extended time on the yeast lees for reserve base wine, while keeping the wines tight, and reducing oxygen exposure for the extended elevage. The focus on multi-vintage cuvees allows for greater complexity in the wines, with the richness from the gradual yeast lees autolysis in the older wines, working with the youthfulness and drive of the more recent vintage.
