Composition: 100% Cinsault. Vine age and soil type: Organic and dry-farmed vines on sandy soils at Hillcrest Farm.

Winemaking: Hand harvested and de-stemmed into open 5000L concrete tanks. Spontaneous fermentation in stainless steel with 14 days of skin contact.

Aging: Aged in old 3000L foudres for 12 months with gentle filtration and small sulfur addition.
