- Vineyard: Upper Oxfordian limestone locally known as “caillottes” (gravel and stone chalk pieces mixed in with clay and a limestone bedrock). Shallow, well-drained soil. The vines are planted at mid-slope at an altitude of 240 to 260 meters
- Farming: Organic fertilizers have been used since 1989. Planting density: 6,800 to 8,800 vines/hectare depending on the age of the plots
- The grapes are handpicked, whole bunches of grapes are fed into pneumatic press.
- Winemaking: Fermentation of the musts in temperature-controlled steel vats for approximately 30 days and 10% in oak barrels of 600 liters. Matured on the lees for 10 months
Our Tasting Note
Very light gold - straw color. The nose is pronounced, showing a mix of white orchard green apple and white peach, with a smoky flint minerality. The medium body has some refined edges to the refreshing acidity. The palate intensity is pronounced, the intensity is turned up a few levels with lots of juicy fresh-cut green and red apples, red pears, white peach, white florals, very complex. A steely underlying backbone of acidity is wrapped perfectly in fold with the fruit. A long finish fans out gently and persistently.
